Fermented tofu (also called fermented bean curd, white bean-curd cheese, tofu cheese, soy cheese or preserved tofu) is a Chinese condiment consisting of a form of processed, preserved tofu used in East Asian cuisine. The ingredients typically are soybeans, salt, rice wine and sesame oil or vinegar.
What are those white spots? Are they safe to eat?
White spots can appear on fermented beancurd. Those white spots are actually naturally-occuring protein or amino acids!
During the fermentation process, a rich variety of amino acid is produced. Depending on the environment and storage, this can cause a concentration of amino acid to reaches saturation point and crystallize, they are totally safe to eat!
